Design Approach

Located in the historic Kissock Block of Old Town Fort Collins, this farm to table restaurant is in the heart of the city. The concept of robust authenticity meant to bring a feeling of health and genuine character into the space. Natural materials such as reclaimed wood, black metal and plant life brings a sense of biophilic design and aids in a farm to table experience. The goal was to create a restaurant that serves clean food, in a comfortable space.

Design Considerations

The first thing to note about this design is that the kitchen is located on the bottom floor. This was chosen with acoustics in mind because it is a long and narrow space. However, this creates difficulty for movement of dishes, prepared food and staff. To combat this, dumbwaiters were placed behind the bar on the first floor with a small serving station. Two dumbwaiters are proposed, one for prepared food and one for dishes. In addition, acoustic paneling and noise absorbent plants have been proposed. The hanging plants from the ceiling promote biophilic design, create a feeling of intimacy in lowering the high ceilings, and provide zoning for the guests.
